The Thai version of grilled chicken is a lot different from the American version, where plump white meat dominates. In Thai "gai yang," the meat is leaner, the sauce more intense and deliciously sloppy. Cilantro root, garlic, fish sauce, sugar and a lot of peppercorns bump up the flavor. It's easy to make, too.
